First, let me be clear, this is not a traditional pancake in any way other than the fact that it is flat. I need to avoid so many foods in order to feel even halfway normal. I don’t always do that, and sometimes I pay the price. Sometimes I don’t. I just don’t understand it, but that’s a (very long) story for another day. Anyway, my usual breakfast is an egg in some form. But I was really getting tired of that. I wanted something I could put honey on that would still be healthy and keep me feeling full like my eggs do. Is honey healthy? Some say yes, some say no, I don’t care. I wanted honey. I love honey. I’m Greek and we’ve always put honey on our pancakes and waffles and like, every other dessert-like substance out there. But since it’s breakfast and I’m always starving at breakfast, it had to be really fast. And simple, of course, like everything I do. So this recipe (if you can call it that) was born. I mixed almond flour, tapioca starch, and an egg, fried it, and… yum! At least for me it was yum. I really don’t think this will be something everyone would like. The closest thing I can think of that it tastes like is a combo of a crepe and a dutch baby. This recipe makes just one, but I’ve also doubled it when my husband wants one. He likes it, too. So at least there’s one other person in the world who does! Give it a try and let me know what you think. 🙂
Super Simple Pan-Crepe-Baby (paleo, gluten-free, dairy free)
Serves one.
Ingredients:
1 T tapioca starch
1 T almond flour
1 large egg
Heat a non-stick skillet to medium heat and then add a little oil.
Mix the tapioca and almond flour in a small bowl.
Add the egg and whisk it all together. It will seem like it won’t mix at first, but trust me, it will. Make sure you get all of the lumps out.
Pour into the preheated, lightly oiled skillet and cook until the edges start to look dry and there are some bubbles showing up.
Flip and cook till the other side is done. I’ve never timed this but I think it’s no more than a minute on the second side. The edges will curl up – that’s normal.
Drizzle on some honey and enjoy!!
